Stewed Cabbage Hot Pot

Here is a delicious hot pot recipe with stewed cabbage, mushrooms, tofu and carrots. All combined to create a heavenly dish that has a rich and succulent taste that is appetizing.

This stewed cabbage hot pot is, really simple to make. Simply place all the ingredients in a casserole dish, cover with water and cook until everything in rich and tender. The whole process should no more then a half an hour to complete and it makes a perfect side dish to serve with a meaty dinner.

Ingredients

  • 11oz Chinese cabbage (shredded)
  • 7oz tofu (cubed and dry fried)
  • 8 dried Chinese mushrooms (soaked and chopped)
  • 1 carrot (sliced)
  • 2 teaspoons salt
  • 1 tablespoon fresh flat leaf parsley (chopped)

Preparation

Put all the ingredients except the parsley in a large flameproof casserole dish, and pour enough water over the mixture to cover. Bring to a boil, then reduce the heat and simmer for about 15 minutes, until the vegetables are tender. Scatter with the parsley, and serve immediately.
