Stuffed Celery Pinwheels

Around the world you get to see stuffed celery pinwheels prepared in different ways but the typical method of preparing is mostly American.

STUFFED CELERY PINWHEELS

Ingredients

Celery                            -        1 bunch

Dry cottage cheese       -        ½ cup

Buttermilk                    -        3 tsp

Salt                                -        ¼ tsp

Minced chives               -        2 tsp

Minced pimentos          -        2 tsp

Procedure:

Wash the celery, cut off the leaves and remove outside stalks. Carefully separate the stalks and keep in order, as they will be put together again.

          Beat the cheese, buttermilk and salt until smooth. Blend in the chives and pimentos. Spread in the hollows of the celery and rebuild stalk. Wrap firmly in waxed paper or aluminum foil and chill 2 hours. Cut in ½ inch slices.

          Note: If you don’t want pinwheels, just fill the stalks.

Makes about 20 pieces.
