Summer Food!

Cool and refreshing recipes will delight summer diners!

Fresh and Creamy Cheesecake

1/4 cup milk

2 eggs

1 cup sugar

2 teaspoons vanilla

1/2 cup Pillsbury baking mix or other brand

2 packages (8 ounces each) cream cheese, cut into cubes and softened

Preheat oven to 350 degrees.  Grease a 9″x1 1/4″ pie pan.  Combine vanilla, sugar, eggs, baking mix and milk in a blender, or beat ingredients with an electric mixer in a medium-sized bowl.  Mix or blend thoroughly for 15 minutes.  Add cream cheese cubes and blend or mix for 3 minutes.  Bake for 40 to 50 minutes or until the center is firm.  Top with sliced strawberries, melted chocolate, raspberries, or strawberry sauce.

Apple Salad With Macaroni

2 Delicious apples, diced

1 cup celery, diced

2 cups cooked macaroni, drained

1/4 cup  mayonnaise or salad dressing

1/4 cup plain yogurt

4 large lettuce leaves

1/2 cup shopped walnuts

Combine yogurt, apples, celery, mayonnaise and apples.  Cover and refrigerate until chilled.  Serve on lettuce leaves and sprinkle with walnuts.  This will serve 4 people.

Summer Potato Salad

8 to 10 red potatoes, sliced

1 cup fresh peas

1 1/2 cups chopped onion

1/2 cup plain yogurt

1/2 cup celery, sliced

2 tablespoons sour cream

2 cups of leaf lettuce, torn

Heinz Tarragon vinegar or other brand

2 teaspoons dill seed

Cook the potatoes in a small amount of salted, boiling water until tender.  Add the fresh peas during the last 3 minutes of cooking.  Drain well.  Combine warm potatoes, peas, celery, onion and vinegar in medium sized bowl.  Cover and refrigerate for 1 to 1 1/2 hours.  Combine dill, sour cream and yogurt in a small bowl.  Add to potato mixture and gently toss.  Gently combine potato mixture and lettuce.  This recipe serves 9 people.
