Summer Squash and Rice Casserole

This colorful casserole makes a beautiful presentation at any table. Try it at your next cookout.

1 medium yellow squash, diced

1 medium zucchini, diced

1 small onion, chopped

1/2 cup Cheddar cheese, grated

1/2 cup grated Parmesan, Romano, Asiago Cheese Blend

1 1/2 cup milk

2 eggs beaten

1 cup minute rice

1/2 teaspoon Italian seasoning

1/4 teaspoon salt

1/4 teaspoon pepper

 

  Combine all ingredients in large bowl; mix well.  Pour into greased 9 inch square baking dish.  Bake at 375 degrees for 35 minutes or until liquid is absorbed.
