Sweet and Sour Zucchini Pickles Recipe
Sweet and Sour Zucchini Pickles Recipe. A delicious sweet pickle to have on the side with a yummy sandwich or mixed into a salad.
Sweet and Sour Zucchini Pickles
8 cups sliced small zucchini
2 onions, quartered and thinly sliced
1/4 cup pickling salt
cold water
2 1/2 cups cider vinegar
1 1/2 cups honey or sugar
1 tbsp mixed pickling spices
2 tsp mustard seeds
4 sprigs fresh dill
Place the zucchini and onions in a bowl. Toss with salt, then cover with cold water. Let stand for 2 hours. Drain well.
Place the vinegar, honey, pickling spices, and mustard seeds in an enamel or stainless steel pan and bring
to a boil. Simmer for two minutes. Remove from heat and stir in the zucchine and onions. Let stand for 1 1/2 hours. Bring mixture to a boil and cook on high heat for 1 minute.
Place sprig of fresh dill in each of the clean jars. Pack zucchini and liquid into each jar and seal tightly.
