Sweet Potato Recipe

published by John Flanagan on Mar 20, 2011

A little something I made up tonight that turned out awesome!!! Best Sweet Potato I have ever eaten.

What you need:

1 Sweet Potato

Olive Oil

Garlic Salt

Sweet Basil

Crushed Red Pepper Flakes

What you need to do is simply this:

Pre-Heat Oven to 350 Degrees

Slice the sweet potato in about 1/8 inch slices and then cut these in half to make them a bit more bite sized.  Place these in a bowl and splash with olive oil until evenly covered.

Use garlic salt, and sweet basil to taste and toss until evenly coated on sweet potato, then very sparingly sprinkle with crushed red pepper flakes for a bit of zip or omit if you don’t like the spice… toss again.

Place on a cookie sheet in a single layer and place on bottom rack for 10 minutes.  Remove and turn potatos.

Put back in the oven for 10 – 15 minutes more until soft then move to top rack on broil for 5 minutes to brown them, even a light blackening was good.

Eat them just like that, they were wonderful!!!
