Sweet Potatoes – a New Kind of Dish – Good!!

Thanksgiving seems to be one of my favorite times of the year. I remember, as a small boy in Boswell, Oklahoma, our parents would get me and my brothers up and going as it was time to visit grandma, who most likely cooked everything in her house for this special occasion. It was a gathering that comes to my mind every time Thanksgiving comes around.
Now as a father, and grand-father I still cherish those moment when all of our families get together just to give thanks for the year that has passed. I’m sure you are about to do the same. All of life’s worries, and the quick pace we seem to have, just slows down for that moment, and we get to cherish our loved ones, including the best part of the day, dozing in my easy chair with the Cowboys playing on TV in the background.
There is nothing wrong with tradition, but those old traditions handed down over the years had to start somewhere. Thus, new traditions are born all the time.
Today I’m going to show you how to make Twice-Baked Chipotle Sweet Potatoes. Here’s what you will need to make this great dish:
6 medium sweet potatoes
1 tablespoon of oil
8 oz. of goat cheese, softened
2 tablespoons of butter, softened
1/2 cup cilantro, minced
1/2 chipotle pepper from can
1/4 cup of adobo sauce from canned chipotle
1 teaspoon of salt
1 teaspoon of chili powder
Now. Scrub the sweet potatoes and rub skins with oil. Wrap each potato in foil, and bake at 350*F degrees for about 1 hour, or until the potatoes become soft.
Meanwhile, combine the remaining ingredients in a mixing bowl. When the potatoes are done baking, remove from the foil and allow them to sit until cool enough to handle. This takes about 5 to 10 minutes.
Cut the potatoes in half and scrape out most of the flesh, taking care not to tear the skins. Add potato to the goat cheese mixture. Mix this well, using a potato masher or mixer.
Spoon into the potato skins, or, for a fancier presentation, use a pastry bag and star tip to fill the skins.
Return to the oven until the tops are browned and potatoes are warmed through. This takes 10 to 15 minutes.
