Here are a few ideas for what to do with your Thanksgiving leftovers. Turkey Pot Pie is an excellent option. I know, everyone ate all the potatoes, cranberry sauce and pie, leaving the poor turkey sitting there (on a plate) all alone. Simply make a chicken pot pie, replacing the chicken with your leftover turkey. This is truly delicious and a great way to make sure your turkey does not go to waste. Various recipes can be found around the internet, but I can’t quote any here do to copyright infringement policies.
If you really want a hearty meal, I suggest Shepherd’s Pie. So you actually have some potatoes, peas and meat left over even after all of your close and distant relatives came and had their diet-breaking feast of the year? Why not make Shepherd’s Pie? Maybe you can even replace the beef with turkey.
Who could forget the good old-fashioned sandwich? I hereby remind you of Baked Turkey Sandwiches. Seriously, could there be an easier meal? Two slices of bread plus one slice of turkey equal one turkey sandwich. Good food, happy eaters, quick meal, minimal cleanup. Try sourdough bread for extra flavor!
When in doubt, make Sweet Potato Salad. If you like your sweet potatoes, this is the dish for you. Consisting of sweet potatoes, celery, onions and pepper, this is obviously a healthy concoction. While easy to make, it does take a couple of hours to properly chill.
Pretend you are running an all-you-can-eat restaurant, and eat everything. Why not have everything? Just serve another Thanksgiving dinner for you and your immediate family (or roommates). This is what I do every year.
