Tomatillo Jalapeño Sauce
3 Tablespoons Olive Oil
3 Fresh Tomatillos, husked, rinsed and halved
1/2 Tablespoon minced jalapeno, seeds discarded
1/4 Cup White Onion, finely chopped
1/2 Teaspoon Fresh Lime Zest
1 Tablespoon Fresh Lime Juice
2 Tablespoons Fresh Cilantro, chopped
Sea Salt to taste
Bring a kettle of water to a boil. Slice a long thin and very shallow “X” along the bottom of each tomatillo. Place them in a heat safe bowl. Prep a second bowl with ice water.
Pour boiling water over the tomatillos and let them sit for 2 minutes. Plunge them into the ice water until they are cool enough to handle. The skin will release enough to be able to be peeled off. Discarded the skin, and chop the flesh.
Place the tomatillo, jalapeno, lime zest, lime juice and cilantro into a blender or food processor. Pulse for 30 seconds.
Drizzle in the olive oil and sprinkle in salt to taste. Pulse again until almost smooth.
Serve over steak, fish, taquitos, enchiladas, chicken or eggs.

I have heard of tomatilla but never tried them as my mom did not know how to prepare them. My mom said she would try this recipe! I am giving it to my brother-in-law since he adores salsa.
