Perk up that lovely tomato with a new recipe that is sure to please!

Baked Tomatoes

6 medium tomatoes

2 tablespoons sherry

salt and pepper to taste

3/4 heavy cream

1 1/4 cups shredded Cheddar cheese

Preheat overn to 300 degrees.  Buttter a 9 inch by 13 inch pan.  Slice tomatoes and place in pan.  Sprinkle with sherry, salt and pepper.  Bake for 30 minutes.  Remove from oven.  Add cream and sprinkle with cheese.  Bake 15 minutes more.  Serves 4

Tomato Pie

2 cups all purpose flour

4 teaspoons baking powder

1 teaspoon salt

1/4 cup vegetable shortening

2/3 cup milk

6 tomatoes

salt and pepper to taste

1/4 cup sliced sweet onion

1 cup mayonnaise

1 cup shredded Cheddar cheese

Preheat oven to 400 degrees.  In medium bowl, mix flour, baking powder, salt, shortening, and milk to form a soft dough.   Put dough into a 10 inch lightly greased pie plate, making a rim.  Peel and slice thick.  Add salt and pepper to taste.  Lay tomatoes on top of dough.  Top tomatoes with onion.  In small bowl, mix together the mayonnaise and cheese.  Spread on top of tomatoes and onions.  Bake 35 minutes.  Serves 10 to 12.
