Tropical Ambrosia Bars

3 envelopes unflavored knox gelatin
1 (8 ounce) can crushed pineapple, drained (reserve juice)
1/4 cup honey
2 cups chopped walnuts
1 cup raisins
1/2 cup flaked coconut
In a medium saucepan, sprinkle unflavored gelatin over reserved pineapple juice with enough water to equal 1 cup; let stand 1 minute. Stir over low heat until gelatin is completely dissolved (about 5 minutes). Stir in honey, then remaining ingredients. Turn into an 8- or 9-inch baking pan; chill until firm. To serve, cut into bars. Yield: about 2 dozen bars.
