Vegetable Lo Mein
A vegetable dish cooked in a large wok.
1 medium-size onion

1 large sweet-red pepper

1 cup broccoli florets
1 tablespoon peanut oil

1 large clove garlic, thinly sliced

2 tablespoons Chinese oyster sauce

1 tablespoon mirin
2 cups cooked spaghetti or vermicelli
splash of toasted sesame oil, or to taste

Method: Cut the onion into 12 wedges. Julienne the carrots and pepper. Cut the broccoli into bite-size pieces. Heat a large wok, the add peanut oil. Add onion and stir-fry until they are slightly tender and beginning to brown, about 2 minutes. Add carrots, pepper, broccoli and garlic and continue to stir-fry for about 2 minutes. In a small bowl, stir together oyster sauce and mirin. Pour over vegetables, immediately add spaghetti or vermicelli and toss well to combine. Remove from heat, splash with sesame oil, toss lightly and serve hot.
