Veggie Banger Skewers

EASY / PREPARE AHEAD
6 tofu or Quorn frozen sausages, defrosted and cut into 3
2 peppers, roughly chopped
75g (3oz) button mushrooms
2 small red onions, cut into wedges
1 bulb fennel, cut into chunks
4tbsp olive oil
2tbsp coriander paste
for the dipping sauce:
3tbsp soy sauce
1tbsp sesame oil
1tsp sesame seeds
1tbsp honey
1 spring onion, finely sliced
you will need:
8 x wooden skewers, soaked in water
1 Thread chunks of sausage, the peppers, mushrooms, onions and fennel on to the wooden skewers. Mix together the oil and coriander paste and brush over the vegetables. These will keep in the fridge overnight. Then cook on the barbecue for 5 to
10 minutes, turning until everything is tender.
2 Mix together the sauce ingredients and serve with the skewers. Per serving: 326 calories, 22g fat (4g saturated), 19g carbohydrate
