Warm Squash Salad in Cabbage Cups

Vegetables you can dress up.

1/2 pound crookneck squash(neck pumpkin)

2 tomatoes

1/3 cup broccoli stems

1 leek

3 tablespoons buttermilk

1/2 teaspoon Dijon mustard

2 teaspoons finely minced fresh basil

pinch of curry powder

4 purple or green cabbage leaves springs of basil garnish

Method: Peel and cut the squash into julienne strips. In a medium-size saucepan, steam squash until tender, 12 minutes or more. Cut the tomatoes into chunks. Peel the broccoli , top the leek and cut both into julienne strips. In a large bowl, combine squash, tomatoes, broccoli and leek. In a small bowl, whisk buttermilk, mustard, basil and curry powder. Pour over squash mixture and toss well to combine. Place cabbage leaves on a serving platter. Spoon squash mixture onto leaves, garnish with basil sprigs and serve warm. 4 serving
