Yesterday’s Potato Salad Recipe
Yesterday’s potato salad Recipe. Yum. Perhaps a last hurrah for the summer time cold dishes.
My recent Potato Salad Recipe:
1 small bag of potatoes of your choice
(chopped into dices)
1 small onion finely chopped
2 to 3 stalks of celery
2-3 tbsps of a spice mixture of your choice (parsley,basil, thyme, garlic, etc…)
salt and pepper to taste
3 tbsps vinegar
2-3 tbsps mustard
1 cup mayonaise
1 tbsp lemon juice
1-2 tsps lemon pepper seasoning
Cook potatoes and drain. I like to save my potato liquid for a soup base for another recipe.
Add all the other ingredients and mix. For my mustard, I usually just squirt it over the top and mix it in.
Cool and refridgerate and eat!
