Zucchini Italian

4 medium size zucchini squash
2 tablespoons bacon grease or butter
1 can tomato sauce
1 teaspoon italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup cheddar cheese, shredded
grated parmesan cheese
Slice zucchini into 1/4 inch pieces.
In saucepan, combine tomato sauce and seasonings. Heat, and then add cheddar cheese. Mix well while continuing to heat. Melt bacon grease in skillet at medium heat. Place layer of zucchini in skillet; cover with sauce and sprinkle with parmesan cheese. Continue layering until all ingredients are used. Cover skillet and cook at medium heat for 10 minutes. Turn zucchini. Lower heat to low and cook 5 minutes. After placing in serving dish, sprinkle again with parmesan. Makes 4-6 servings.
