Gajrela or Carrot Pudding?

A unique dessert made from carrots. Try and discover what can be done to carrots.

Ingredients

Carrots 1 kg, Ghee or clarified butter 50g, 5-6 cardamom, milk 1.5 liter, 500g sugar, 50g almonds, 50g raisin, condensed milk or khoya 250g.

Method

Wash and grate the carrots. Heat the ghee in saucepan and fry the cardamom for 1-2 minutes. Add the grated carrots and stir it so that is well mixed in with ghee. Pour on milk and add the sugar. Bring to a boil and stir to dissolve the sugar. Continue to cook for 40 minutes until the milk begins to thicken. Reduce the heat and add the almonds and raisins. Pour in the condensed milk or khoya and continue to cook 10 more minutes. Garnish with grated almonds and raisins and serve.
