Gingernut Balls

A recipe for adults who like ginger.You could replace the ginger with dates for a more ’sweet’ ball. This recipe is easy to make and more suited for adult tastes.

  • 5 Weet-Bix
  • 250g pack Gingernut biscuits
  • ½ cup Chopped Dried Apricots
  • ½ cup Sultanas
  • ? cup coconut
  • ½ cup crystallized Ginger
  • 415g can sweetened Condensed Milk
  1. Lightly crush the weet bix and gingernut biscuits
  2. Place all the ingredients in a bowl, except for the coconut
  3. Mix well
  4. Roll mixture into approximately 48 balls
  5. Toss into the coconut and coat well
