Gluten intolerance or Celiac disease is nothing to play with so revamping tried and true recipes to be gluten-free is a must-try. Using organic applesauce, adding it to gluten-free flours, will make the pancakes moister and keep a person from feeling deprived.

Things Needed:

  • 1-Cup gluten-free buckwheat flour
  • ½ Cup gluten-free corn flour
  • ½ Cup gluten-free oat flour
  • 1-Cup organic applesauce
  • 1 Large egg
  • 1 3/4-2 Cups milk
  • 1 Tsp salt
  • 1 ¼ Tsp apple pie spice
  • 1 Tbsp gluten-free baking powder
  • 2 Tbsp gluten-free brown sugar
  • Olive oil for your griddle/skillet
  1. Combine the flours in a bowl and set it aside until the end.
  2. Whisk together the applesauce, egg, and 1 ¾ cup of the milk.
  3. Add to it the salt, apple pie spice, baking powder and brown sugar.
  4. Gradually mix it the flour only until the liquid is absorbed.
  5. Heat your griddle or skillet with a little olive oil, cook the pancake on one side and then flip to the other side.

Tips:

  • Crystal Sugar Co makes gluten free brown sugar
  • Clabber girl, Calumet and Spartan brand baking powders are gluten-free
  • Gluten-free flours tend to be a bit heavier so you might need the extra milk.
  • Call all companies that do not have their label listed as gluten-free.
