Grandma’s Wheatgerm Cookies

Grandma’s scrumptious wheatgerm cookies are a budget friendly, easy to make treat ideal for cookie jars, lunch boxes or as accompaniment to your favorite beverage.

Grandma’s Wheatgerm Cookie Ingredients:

  • 1½ Cups (225g) of Sifted Plain Flour
  • 1½ Cups (135g) of Toasted Wheatgerm
  • 1 Cup (100g) of Quick-Cook Porridge Oats
  • 1 Cup (230g) of Firmly Packed Soft Brown Sugar
  • 1 Cup (170g) of Milk Chocolate Chips
  • ½ Cup (60g) of Chopped Walnuts or Chopped Pecan Nuts
  • ½ Cup (125ml) of Canola Oil
  • ½ Cup (135g) of Unsweetened Apple Sauce
  • 2 Eggs
  • 2 Teaspoons of Baking Powder
  • 1 Teaspoon of Freshly Ground Sea Salt

Note: While; you can buy pre-toasted wheatgerm, you may still wish to toast your own. Do so by spreading raw wheatgerm out on a baking tray and baking in a preheated oven at 1800C for 10 minutes stirring halfway through cooking

Method:

  1. Lightly beat the eggs
  2. In a large mixing bowl beat soft brown sugar and canola oil until blended
  3. Beat in the eggs
  4. Then beat in the apple sauce
  5. In another mixing bowl combine the flour, wheatgerm, quick-cook porridge oats, salt and baking powder
  6. Gradually add the combined dry ingredients to the brown sugar mixture and mix well
  7. Stir in the chocolate chips and the chopped walnuts or chopped pecan nuts
  8. Preheat oven to 1800C
  9. Drop rounded teaspoons of dough about 5cm (2”) apart onto greased baking trays
  10. Coat bottom of a glass with non-stick cooking spray
  11. Use prepared glass to slightly flatten cookies
  12. Transfer loaded baking trays to preheated oven and bake at 1800C for 10 – 12 minutes or until edges are lightly browned and cookies are set
  13. When cooked remove grandma’s wheatgerm cookies from the oven and allow to cool on baking trays for 2 minutes before transferring to wire racks to cool completely
  14. Once completely cooled transfer grandma’s wheatgerm cookies to an airtight container ready for consumption

Yield:

These portions will yield 4 dozen scrumptious grandma’s wheatgerm cookies

Serving:

Grandma’s wheatgerm cookies are great when served in conjunction with beverages including natural fruit juices (citrus in particular), milk-based beverages such as milkshakes, malted smoothies, Milo and hot chocolate as well as over a cup of coffee, tea, Mocha etc. They also make a great addition to a mixed cookie jar/plate or as a lunch box treats.
