Great Jell-O Desserts: Florida Sunshine Cups
A dessert recipe for light and fluffy Florida Sunshine Cups.
I’ve got a bunch of great Jell-O desserts to share that are fun to make, delicious to eat, and are low in fat and calories! For my second Jell-O recipe, I have a dessert that looks as good as it tastes – a light, orangey-flavored snack! Check out my recipe for a great Florida Sunshine Cup!
Ingredients (6 Servings)
- ¾ cup of boiling water
- 1 package of Jell-O orange or lemon flavor gelatin
- 1 cup of cold orange juice
- ½ cup of fresh raspberries
- 1 can of mandarin orange segments (drained)
Instructions
1. Stir boiling water into gelatin in a large bowl for at least 2 minutes, or until completely dissolved. Stir in cold orange juice. Refrigerate for 1 and ½ hours or until thickened.
2. Measure ¾ cup of the thickened gelatin into a medium bowl. Set this aside for now. Stir the fruit (the raspberries and the orange segments) into the remaining gelatin. Pour into a serving bowl or 6 dessert dishes.
3. Beat the gelatin you set aside earlier with an electric mixer on high speed until it’s fluffy and looks like it has doubled in size. Spoon this over the gelatin in your 6 dessert dishes or serving bowl.
4. Refrigerate for at least 3 hours, or until firm.
