Great Jell-o Desserts: Lemon-blueberry Pie Cups
A recipe for a creamy Lemon-Blueberry Pie Cup dessert!
I’ve got a bunch of great Jell-O desserts to share that are fun to make, delicious to eat, and are low in fat and calories! For my fifth Jell-O recipe, I have a light and creamy dessert that’s sure to be a hit with anyone looking for something delicious, yet not too filling at the same time! Ingredients (6 Servings):
- 6 vanilla wafer cookies
- ¾ cup of canned blueberry pie filling
- 1 cup of boiling water
- ¾ cup of cold water
- 1 packages of Jell-O lemon flavor gelatin
- ½ tub of thawed Cool Whip whipped topping
- 1 package of freshly-picked blueberries
- 1 sprig of mint
Instructions:
1. Place one vanilla wafer on the bottom of each of the 6 dessert cups. Top each wafer with 2 tablespoons of pie filling. Set this aside for now.
2. Stir the boiling water into the lemon gelatin in a large bowl for at least 2 minutes, or until completely dissolved. Then, stir in the cold water. Refrigerate for 10 to 15 minutes, or until the mixture is slightly thickened (similar to a thickness of unbeaten egg whites). Stir in ½ of the whipped topping until the mixture is well-blended. Spoon over the pie filling in the 6 dessert cups.
3. Refrigerate for 2 hours or until firm. Garnish with the remaining whipped topping, a few blueberries, and a sprig of mint for appearance.
