Honey Maple Cookies

Invigorating honey maple cookies are another scrumptious, budget friendly, energy rejuvenating, easy to make treat for cookie jars, lunch boxes or as accompaniment to beverages such as coffee, tea, milk, Milo, malted smoothies, hot chocolate, Mocha etc.

Honey Maple Cookie Ingredients:
- 1¼ Cups (185g) of Sifted Plain Flour
- 1 Cup (170g) of Dark Chocolate Chips
- ½ Cup (60g) of Chopped Pecan Nuts
- ½ Cup (125g) of Softened Butter
- 1/3 Cup (115g) of Honey
- 1/3 Cup (80ml) of Maple Syrup
- 1 Egg
- ½ Teaspoon of Vanilla Extract
- ½ Teaspoon of Bicarbonate of Soda
- ½ Teaspoon of Freshly Ground Sea Salt

Method:
- In a large mixing bowl beat butter until light and fluffy
- Add the honey and maple syrup, a little at a time, beating well after each addition
- Beat in the egg and the vanilla extract. Note that the mixture will take on a curdled appearance at this stage
- In another mixing bowl combine the sifted plain flour, bicarbonate of soda and the freshly ground sea salt
- Gradually add the combined dry ingredients to the honey mixture and mix well
- Stir in chocolate chips and chopped pecan nuts
- Preheat oven to 1800C
- Drop tablespoons of dough 5cm (2”) apart onto greased baking trays
- Transfer baking trays to a preheated oven and bake at 1800C for 8 – 10 minutes or until golden brown
- Once cooked remove the cookies from the oven and transfer to wire racks to cool
- When cooled transfer the finished honey maple cookies to an airtight container to await consumption
