Hot Chocolate Pancakes

A delicious dessert breakfast that’s way healthier than it tastes!

Ingredients:

1 cup flour

1 cup skim milk

1 packet hot chocolate mix

1 egg

1/4 cup canola oil

3 tsp. baking powder

1/2 tsp. sugar (or splenda)

Dash salt

Dash pepper

(optional) handful sunflower seeds or dried cherries, chopped

Directions:

1.Sift together all dry ingredients in a medium bowl.

2. Add wet ingredients. Hand beat until smooth.

3. Add optional ingredients. Beat again.

4. Pour a bit of oil into a cast iron skillet on medium heat. When it starts to bubble, add about 1/2 cup of the mixture.

5. Cover. Wait 30 seconds.

6. Remove cover, flip pancake, and cover again for 20 seconds.

7. Place on plate.

8. Repeat steps 4-7 (without adding more oil) until all mixture has been used.

9. Serve with maple syrup, powdered sugar, or bananas foster.
