Cardamom Kulfi Ice Cream
This Indian ice cream is creamier than the normal ice cream and it takes longer to melt. Try it and you will find the flavor is just awesome.
Ingredients
- Milk 1 liter
- sugar 250g or to taste
- green cardamom
- pista 50g
- almonds 50g
- raisin 50 g
Method
Take the milk in a thick container. Add ground cardamom (one can use muslin and make a pouch for the cardamom) and bring it to boil in an open container. Stir the milk so that it does not stick to the container and get burnt. Keep stirring till the mild is reduced to 1/4thof the volume. Now add sugar, raisin, ground almonds, and ground pista to the condensed milk. Cool the mixture and taste. Add sugar if required as per one’s taste. Once the mixture is cold enough pour the mixture in molds and keep in freezer to set. Once set remove from the molds and garnish with ground almonds and pista. Your kulfi is ready to serve.
