Homemade Ice Cream
This is the basic homemade vanilla ice cream recipe. It will yield 15 servings. After you see how to make the basic vanilla, you can start experimenting with your favorite flavors and add-ins.

Ingredients
- 4 large eggs
- 1 Tbsp of pure vanilla extract
- 2 cups of sugar
- 3 cans of 8oz evaporated milk
- ½ gallon of whole milk
- 2 bags of ice cubes
- 1 box of rock salt (ice cream salt)

There are several options for ice cream freezers. You can pay anywhere from $20.00 to $1000.00 for an ice cream freezer. It all depends on what best suits your needs. However, I think that the best ice cream comes from either a manual hand turned ice cream freezer or a self contained electric ice cream freezer. You really do not have to buy a fancy one, like the last picture, to get great ice cream.
Method
- Beat eggs in large bowl.
- Beat in sugar.
- Beat in milk.
- Pour mixture into a double boiler and cook on medium low heat for about 25 minutes; stir periodically to prevent sticking or lumping. * Consistency should be thick and smooth.
- Set aside and let mixture come back to room temp- about 1 hour.
- Pour ice cream mixture into ice cream cylinder, filling up to “fill line.”
- Place the top on the cylinder and place the cylinder inside the ice cream freezer.
- Evenly spread 3 cups of ice between the bucket and the cylinder.
- Sprinkle ½ cup of rock salt over ice layer.
- Repeat ice and salt layers until you reach the ice “fill line.”
- Lock on the ice cream freezer lid and start the machine.
- You might need to add more ice and salt periodically as it melts away.
- If the freezer is electric, it will turn off automatically when the ice cream is frozen.
Serve and enjoy!
Of course, you can now experiment with your favorite add-ins. Just be sure that the add-in is chilled or frozen before you add it to the ice cream mixture.
Fruity Ice Cream
Just add 16 oz of frozen strawberries after you have put the ice cream mixture into the cylinder. You can also do this with any other frozen fruit: blackberries, peaches, mango, blueberry, etc..
Cookie Ice Cream
Add ½ package of chilled and semi crushed cookies to the ice cream mixture as you place in cylinder.
Candy Bar Ice Cream
Rough chop your favorite frozen candy bar into the mixture as you place it into the cylinder.

We got ice cream makers at work that look like balls, you put the ingredients in then roll and play with it until it makes icecream, good for kids that way, keeps them busy.
