A basic recipe for vanilla ice cream can be easily made as follows:
Ingredients:
1 cup of white sugar
1 cup of milk
2 eggs
2 cups of heavy crème
1 ½ teaspoons of vanilla extract
1 tablespoon of fresh lemon juice
To make this ice cream you are going to need the following utensils:
A medium sized sauce pan
A tablespoon for stirring the custard mixture
A handheld electric mixer
A large mixing bowl
An ice cream maker
A large container to hold the ice cream while it is hardening in your freezer
Directions:
Add the cup of milk along with the sugar and eggs to the sauce pan stirring as you add the ingredients and continue stirring until the sugar is thoroughly dissolved. Continue stirring until the mixture is thick enough to cling to the back of the spoon; this will take from 10 to 29 minutes. Remove the mixture from the heat and allow the mixture to cool.
While this mixture is cooling put the two cups of heavy cream into a mixing bowl and beat it with the handheld electric mixer until the resulting whipped cream is at the soft peak stage. After it has reached this stage you can beat in the vanilla or other flavoring of your choice.
Fold the whipped cream into the custard mix you prepared first and allow it to chill overnight in your refrigerator. It is then ready to be placed in your icecream maker. Follow the manufacturer’s directions for making ice cream. This is the stage where you place two of the ingredients that weren’t mentioned before cold and air.
If you are going to use any other flavors for your ice cream they are added in place of vanilla while you are preparing the whipped cream. Fresh of frozen fruits ma be used, but chop them up into small pieces. Other ideas are different commercially prepared flavors. Chocolate is another popular flavor that is prepared using either chocolate syrup or small chunks of chocolate.
After you have finished churning the ice cream in the ice cream maker it has to be placed in a container large enough to hold the whole batch. Place the container into a regular freezer and allow it to harden until it is ready to eat. Then you can serve your homemade ice cream.
The higher the grade of ice cream it is because it contains less air then less expensive brands. They all use basically the same ingredients except the amount of air contained in the ice cream. You can easily check this by holding two equally sized containers in your hands. The high grade ice cream will feel heavier then the lower garde.
