Paul’s Lime Ice Cream

This ice cream is tart and wonderful. I would consider using a dollop of it as a sorbet to cleanse the palate between course’s of a multiple course meal.

Recently I have found myself being really interested in articles that were recipes. I love to cook and basically cook all my own food. I make my own mayonnaise, ketchup, mustard, coffee creams, French fry dipping sauces, hamburger buns, hot dog buns, hamburger from sirloin and chuck to create great hamburger. I prefer around an 85% lean hamburger as it does not shrink much and the flavor is wickedly great! I make my own hot dogs and sausage and I make my own ice cream. Sometimes I use a machine and sometimes I improvise.

Today we get so hung up on all the gadgets that we feel we can’t make something or another unless we have the right equipment. This is untrue all you need is the desire, after all our grandparents make and made the best stuff and they didn’t have all the gadgets.

A lot of my recipes I will share BUT there are some that I just will not,  I know you understand. This article will focus on Lime Ice Cream. It’s tart and sweet and creamy and I think it’s awesome, however my mother-in-law didn’t like it but most of my friends loved it. I like this recipe because it doesn’t require heavy or double cream just whipping cream. I do mix and freeze it in an ice cream machine.

Here’s the recipe but I don’t make it like this I modify it.

PAUL’s LIME ICE CREAM

1 1/3 Cup Lime juice

1 1/3 Cup Sugar

1 Cup Whipping Cream

1 Cup Whole Milk

Mix ingredients just before putting in machine. Very strong lime flavor.

I use freshly squeezed lime juice.

Here are my modifications:

I feel it is too strong but some don’t.  What I did was reduced the lime juice and sugar to 3/4 cup each, I reduced the milk to 1/2 cup, and left the amount of cream unchanged at 1 cup. This recipe with my modifications makes just over a quart of ice cream.

I have also tried with half lemon and half lime juice and it was great as well.

    I have never had the milk or cream curdle .. I have had it curdle when I tried pineapple (fresh), but I overcame that by putting in canned pineapple as the canning process neutralizes the natural acid found in fresh pineapples.

    I didn’t even worry about the milk or cream curdling until I tried to make some ice cream with fresh pineapple. Fresh pineapple curdled my cream.

    I fix this by using canned pineapple as the canning process neutralizes the natural acid found in fresh pineapple.

    So, to answer your question, no the lime juice did not curdle my milk or cream. I wonder why this is?
