Scary Spice Cupcakes

A marshmallow-and-coconut ghost sits pretty atop a spiced cupcake—just the right size for little paws.

Ingredients

  • paper cups
  • 1 ¼ tsp. ground cloves
  • salt
  • ¼ cup vegetable shortening
  • ¼ cup sugar
  • 1 large egg
  • flour mixture
  • ¼ cup unsulfured molasses
  • ½ cup boiling water
  • 2 cups unsweetened shredded coconut
  • 2 cups marshmallow cream
  • candy-coated chocolate-ball-shaped (nips or m&m) or ice cream sprinkles

Direction

1. Heat oven to 3 F. Line a 12-cup muffin pan with paper cups. In a small bowl, combine 1 ¼ tsp. ground cloves, and a pinch of salt. In medium bowl, with electric mixer on high, beat together ¼ cup vegetable shortening and ¼ cup sugar; beat in 1 large egg. Beat in flour mixture, alternating with ¼ cup unsulfured molasses stirred together with ½ cup boiling water, beating well after each addition.

2. Divide batter evenly among muffin cups. Bake 15, to 20 minutes, or until a toothpick inserted in center of cupcake comes out clean. Remove cupcakes from pan. Let cool completely on wire rack.

3. In small bowl, stir together 2 cups unsweetened shredded coconut and 2 cups marshmallow cream until well combined. For each cupcake, shape 2 Tbs coconut mixture into a ghost and place on top of cupcake.

4. For eyes, add candy-coated chocolate-ball-shaped candies or ice cream sprinkles to each ghost.

Yield: 12 cupcakes
