Strawberry Dumplings

A recipe handed down to me from my mom.

Ingredients

  • 1 qt. strawberries
  • 1 c. plus 1 Tbsp. sugar, divided
  • 3/4 tsp. salt, divided
  • 1/2 tsp. vanilla flavoring
  • 1 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 2/3 c. milk

Method

  1. In a Dutch oven, combine strawberries, 1 cup sugar, 1/4 teaspoon salt and vanilla flavoring. Bring to a boil. Reduce heat and simmer for 5 minutes.
  2. Combine flour, baking power, remaining sugar and salt in a large mixing bowl. Add milk; stirring just until mixed (dough will be very thick). Drop by tablespoonfuls in 6 mounds on top of simmering strawberry mixture. Cover and simmer for 15 minutes. (Do not lift lid while simmering.) 
  3. Spoon dumplings into serving dishes. Serve with Cool Whip or ice cream.
