Iced Brown Sugar Cookies

Iced brown sugar cookies are energy-packed, budget-friendly, easy to make, take anywhere snacks that travel well. They are brilliant to have in the car as travel snacks or to simply enjoy along with a cup of your favorite beverage (coffee, tea, milk etc) during a coffee break.

Brown Sugar Cookie Ingredients:

  • 1¾ Cups (260g) of Sifted Plain Flour
  • 1 Cup (230g) of Firmly Packed Soft Brown Sugar
  • ½ Cup (125g) of Softened Butter
  • ½ Cup (125g) of Sour Cream
  • 1 Egg
  • ½ Teaspoon of Bicarbonate of Soda
  • ¼ Teaspoon of Freshly Ground Sea Salt

Brown Sugar Icing Ingredients:

  • 1 Cup (125g) of Confectioners’ Sugar
  • ½ Cup (115g) of Firmly Packed Soft Brown Sugar
  • ¼ Cup (60g) of Butter
  • 2 Tablespoons of Milk

Method:

  1. In a medium mixing bowl cream together the butter and the soft brown sugar until light and fluffy
  2. Beat in the egg and sour cream
  3. In another mixing bowl combine the sifted plain flour, the bicarbonate of soda and the salt
  4. Once combined gradually add the dry ingredients mixture to the creamed mixture and mix well
  5. Preheat oven to 1900C
  6. Drop level tablespoons of dough about 5cm (2”) apart onto greased baking trays
  7. Transfer loaded baking trays to a preheated oven and bake at 1900C for about 10 minutes or until golden
  8. Once cooked remove the cookies from the oven and transfer to wire racks to cool

Brown Sugar Icing Method:

  1. Melt ¼ cup (60g) of butter over a low heat
  2. Add the ½ cup (115g) of soft brown sugar
  3. While continually stirring cook for 2 minutes
  4. Gradually add the milk
  5. Bring mixture to a boil, stirring all the while
  6. Remove from heat and stir in 1 cup (125g) of confectioners’ sugar
  7. Let icing mixture stand for 20 minutes to cool
  8. Use a piping bag, spatula or flat wide bladed knife to apply the icing to the cooled cookies
  9. Return the iced cookies to the wire racks to let icing set completely
  10. Once the icing has completely set transfer the iced brown sugar cookies to an airtight container ready for serving

Serving:

  • These portions will yield around 2 dozen iced brown sugar cookies
  • Iced brown sugar cookies are a great anytime snack perfect for the lunch box, on your travels or as a component of a self-serve plate, jar or tin of mixed cookies to be eaten as a quick snack for the puckish or enjoyed at leisure with a beverage (tea, coffee, milk, smoothie, fruit juice etc.).
