Individual Pineapple Puddings

A delicious recipe that is rather tasty and reasonably healthy.They are just as nice served cold as a muffin!
½ Cup plain Wholemeal Flour
¼ Cup Custard Powder
? Cup Sugar
1 Egg, lightly beaten
½ Cup plain White Flour
1 tsp Baking Powder
440g can Crushed Pineapple
3 tbsp margarine, melted
Topping
3 tbsp Brown Sugar
2 tsp margarine, melted
¼ Cup Nuts, finely chopped
- Sift flours, custard powder and baking powder into a large bowl.
- Add sugar
- In a separate bowl, combine undrained pineapple, egg and margarine.
- Add the wet ingredients to the dry ingredients and mix until well combined.
- Spoon this mixture into greased muffin cups.
- Combine topping ingredients and sprinkle on top of muffins/pudding mix.
- Bake at 190º C for approximately 30 minutes or until cooked.
- Serve warm with custard or ice cream.

These sound delicious! I’m not sure what Custard powder is. I will ask around, maybe pudding powder? I wonder why I don’t know this?
I’m still going to give it a try as I am doing more cooking indoors now and my boys (& I) love muffins.
