Individual Pineapple Puddings

A delicious recipe that is rather tasty and reasonably healthy.They are just as nice served cold as a muffin!

½ Cup plain Wholemeal Flour
¼ Cup Custard Powder
? Cup Sugar
1 Egg, lightly beaten
½ Cup plain White Flour
1 tsp Baking Powder
440g can Crushed Pineapple
3 tbsp margarine, melted

Topping

3 tbsp Brown Sugar
2 tsp margarine, melted
¼ Cup Nuts, finely chopped

 

  1. Sift flours, custard powder and baking powder into a large bowl.
  2. Add sugar
  3. In a separate bowl, combine undrained pineapple, egg and margarine.
  4. Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Spoon this mixture into greased muffin cups.
  6. Combine topping ingredients and sprinkle on top of muffins/pudding mix.
  7. Bake at 190º C for approximately 30 minutes or until cooked.
  8. Serve warm with custard or ice cream.

1.5mg Iron

    These sound delicious! I’m not sure what Custard powder is. I will ask around, maybe pudding powder? I wonder why I don’t know this?
    I’m still going to give it a try as I am doing more cooking indoors now and my boys (& I) love muffins.
