Light and Luscious Strawberry Dessert

Everyone loves strawberry shortcake, but sometimes serving it can be an issue. This dessert is easy to make, presents well, keeps well, and is a favorite in my home.

Ingredients

  • 1 Angel Food Cake, standard size – ready-made works just fine.
  • 1 quart fresh strawberries
  • 1 large box strawberry or raspberry flavored gelatin
  • 1 – 8 oz container of whipped cream

Method

Cool the cake in the fridge for a couple hours before beginning.  Clean strawberries.  Choose several pretty ones for garnishing; slice the rest into halves.  Set aside.

Make the Jello as follows:  Add 2 cups boiling water to gelatin, stir until completely dissolved.  Add 1 cup of ice cubes, stir until dissolved.  Place in fridge and cool until thickened but not set.

In a large serving bowl, tear the cake into large chunks.  Pour thickened jello over.  Sprinkle all the sliced strawberries evenly over the mixture.  Add whipped cream in large dollops.  Gently mix with a folding motion.  Refrigerate until firm.

You may garnish with the whole strawberries and/or more whipped cream as desired.  Note:  other berries are also good on this!

    Well…you could always use low-fat whipped cream and tell yourself that angel food cake is mostly air. Then you’re OK!
