Macadamia-lime Snowflakes

These adorable, light and tasty snowflakes make a great holiday treat.

To make Macadamia-Lime Snowflakes you will need to gather together the following ingredients;

·         2 tbsp. powdered sugar

·         2 tbsp. grated lime peel

·         1 cup Macadamia nuts (toasted and coarsely chopped)

·         6 oz. premium white baking chocolate

·         ¾ cup softened butter

·         1 ½ cups light brown sugar, firmly packed

·         1 tsp. baking powder

·         2 eggs

Begin by preheating your oven to 350 Degrees F and lining a 13×9 inch baking pan with foil.  Make sure that you extend the foil over the edges of the pan.   Next lightly grease the foil.

Once those actions are complete take a large electric mixing bowl and add into it the softened butter and sugar.  Mix it until it is fluffy.   Proceed by adding the baking powder, eggs and flour.   Mix until blended.   Then hand stir in the white chocolate, lime peel and nuts.

Next pour the batter into the prepared baking pan and spread it around the pan evenly.  Place the baking pan into the oven and let it back for 25 minutes or until a toothpick inserted into the center comes out clean.

Once it is baked, remove the pan from the oven and let it cool.   Then lift the cooled cake out of the pan by using the foil that you ran over the pan’s edges.   Next use a snowflake cookie cutter to cut out assorted snowflakes from the cake.   Sprinkle the snowflake shaped cookies with powdered sugar and serve them on a festive holiday platter along with a piping hot cup of hot chocolate or a cold, frosty glass of milk.  This recipe should yield 11 servings.
