Marshmallow Peanut Butter Squares

Makes a great treat for lunchboxes.

Ingredients

  • 1/2 cup Butter or Margarine
  • 3/4 cup Smooth Peanut Butter
  • 12 oz Butterscotch Chips (Approximately 300 grams or 1 package)
  • 4 cups Miniature Marshmallows (Rainbow Coloured)

Method

  1. Grease an 8×8x2 pan with butter or margarine so that the squares can be removed easily.
  2. Mix butter, peanut butter, and butterscotch chips in a pot over low to medium heat.  Stir until just melted and then remove immediately from heat.  Be careful, this mixture can burn quite quickly!
  3. Place miniature marshmallows in a buttered pan and spread on warm mixture.  Stir until marshmallows and the warm mixture are mixed well.
  4. Refrigerate for at least 1 hour.
  5. Cut into squares when cool.  Enjoy!
