Marshmallow Peanut Butter Squares

Makes a great treat for lunchboxes.
Ingredients
- 1/2 cup Butter or Margarine
- 3/4 cup Smooth Peanut Butter
- 12 oz Butterscotch Chips (Approximately 300 grams or 1 package)
- 4 cups Miniature Marshmallows (Rainbow Coloured)
Method
- Grease an 8×8x2 pan with butter or margarine so that the squares can be removed easily.
- Mix butter, peanut butter, and butterscotch chips in a pot over low to medium heat. Stir until just melted and then remove immediately from heat. Be careful, this mixture can burn quite quickly!
- Place miniature marshmallows in a buttered pan and spread on warm mixture. Stir until marshmallows and the warm mixture are mixed well.
- Refrigerate for at least 1 hour.
- Cut into squares when cool. Enjoy!
