My Mothers Swedish Apple Cake
A really awesome swedish apple cake from my mother’s kitchen to yours. A really great dessert to make at any time of the year.
My Mothers Swedish Apple Cake
Cream together: 1 1/2 cups sugar
2 eggs
1/2 cup shortening
1 tsp vanilla
Add: 1 1/2 cups flour
1 tsp. baking soda
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
Add: 3 cupt pared raw apples and 1/2 cup nuts (optional)
I love it without the nuts.
Mix everything together and then bake at 350 for 45 minutes
13″ x 9″ pan.
I love it with more apples the better. That way you get a cake with tons of apples. This one always got gobbled up fast.
This was one of my favorite desserts and I often wished she would make it more often. The most time consuming part is cutting the apples. But worth the effort.
Great with homemade cool whip:
heavy cream or whipping cream
3/4 to one cup sugar. Maybe a tbsp vanilla and a few shakes of cinnamon or nutmeg. Yummy. But the store boughten Cool Whip also is great when we get lazy. I grew up on the store boughten stuff and then when I got married I got used to my husband’s mother’s cooking.
