Banana Nut Bran Muffins
Try these great banana nut bran muffins.
This yields 12 muffins.
Ingredients
1 cup unbleached white flour
1/2 cup whole wheat flour
3/4 cup light brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon sea salt
1 cup wheat bran
3 ripe bananas
1 large egg
3/4 cup water
1 1/2 teaspoons vanilla extract
1 teaspoon grated lemon peel
3/4 cup chopped roasted walnuts
Method
- Preheat the oven to 375 degrees F.
- Sift all these ingredients – unbleached white flour, whole wheat flour, 3/4 cup light brown sugar, baking powder, baking soda and sea salt. Add the bran and the walnuts and stir to combine.
- Whisk bananas, water, egg, vanilla extract, grated lemon peel in a medium bowl or blend in a food processor. Pour this mixture into the sifted ingredients. Stir just until mixed well. (Do not overstir)
- Spoon the batter into a greased or papered muffin tin. Fill each cup nearly to the top.
- Bake for 15 to 20 minutes.
- Cool the muffins at least 10 minutes before removing from the tin.
