Crepe Delight

Try these crepes for a real delight. The best part: You can make these and store in the refrigerator up to a day ahead.

 

Ingredients

1cup plain flour, sifted – 3 eggs, lightly beaten – 1 ¼ cups milk – 2 table spoon oil.

For Filling

300 grams chicken, cooked and chopped – 3 eggs, hard-boiled and chopped – ½ cup mayonnaise.

Preparation

In a bowl, stir in the milk, eggs and oil into the flour, Beat until the mixture becomes smooth. Pour 2 table spoon of batter into a greased pan and cook until it turns slightly brown. Turn and cook the other side also. Repeat with the remaining batter. Place about 2 teaspoons of filling at one end of each of the crepes and roll up. Fold in the sides to form a parcel. Grease an ovenproof dish and place the parcels in and bake covered in a moderate oven for about 35 minutes. Serve hot with a dish of cool yoghurt.

Method for the filling

Combine all the ingredients into a bowl and mix well.
