Leek and Cheese Filo Parcels

These are delicious I recommend everyone should try these at some point in their life.

Ingredients

  • 4 medium leeks
  • 1tbsp oil
  • 1oz butter
  • 9oz onion (diced)
  • 1 clove crushed garlic
  • 1/2 tsp thyme
  • 1/4tsp salt
  • 2 tbsp cream
  • 5oz Gruyere cheese
  • 12 sheets filo pastry

Method

Heat the oil and add half the butter in a pan, fry the leek, onion and garlic. Season, add the thyme and cook, stirring often, for approximately 12 minutes. Stir in the cream and cook until all the liquid is absorbed. Allow to cool slightly then stir in the cheese. Wrap in double sheets of filo pastry. Brush with melted butter and cook until golden. Serve with butter or tomato sauce.
