Orange Marmalade Muffins

Recipe for wonderful fall muffins, easy and fun and tasty and different.

Yield: 12 regular sized or 6 large muffins

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ¾ teaspoon baking powder
  • 2 beaten eggs
  • 1 cup sour cream
  • ¼ cup orange marmalade
  • 1 tablespoon butter, melted
  • 1 ½ teaspoons vanilla

Method:

  1. Preheat oven to 400 degrees.
  2. Using the wrapper from a stick of butter or a pat of butter or margarine on a paper towel, grease the cups of your muffin tin.
  3. In large bowl, stir dry ingredients together. Make a well in the center and set aside. Combine eggs, sour cream, marmalade, butter and vanilla. Add sour cream mixture to flour, all at one time. Stir until batter forms.
  4. Bake for 20 to 25 minutes.

    Not all marmalades are created equal. Is there a particular brand you endorse?
