Orange Marmalade Muffins
Recipe for wonderful fall muffins, easy and fun and tasty and different.
Yield: 12 regular sized or 6 large muffins
Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- ¾ teaspoon baking powder
- 2 beaten eggs
- 1 cup sour cream
- ¼ cup orange marmalade
- 1 tablespoon butter, melted
- 1 ½ teaspoons vanilla
Method:
- Preheat oven to 400 degrees.
- Using the wrapper from a stick of butter or a pat of butter or margarine on a paper towel, grease the cups of your muffin tin.
- In large bowl, stir dry ingredients together. Make a well in the center and set aside. Combine eggs, sour cream, marmalade, butter and vanilla. Add sour cream mixture to flour, all at one time. Stir until batter forms.
- Bake for 20 to 25 minutes.
