Pavlova, The Perfect Christmas Dessert

A cold dessert for those of you who want to try something different this Christmas.

This recipe comes from a popular New Zealand Cook Book called Edmonds Cookery Book. Most New Zealand homes own this book and have done so for years. I remember my mother having an earlier edition when I was a child.

Ingredients:

3 egg whites                                 1 teaspoon vinegar

3 tablespoons cold water             1 teaspoon vanilla essence

1 cup caster sugar                        3 teaspoons cornflour

Method:

Preheat oven to 150C. Beat egg whites vigorously until stiff. Add water and beat again. Add sugar gradually while still beating. Fold in vinegar, vanilla and cornflour.

Line baking tray with baking paper. Spread the stiff mixture in a circle shape, keeping as round as possible and not too close to the edges. Smooth top surface. Bake for 45 minutes. Remove from oven and leave to cool.

Lift cold pavlova onto a serving plate. Decorate with whipped cream and fresh fruit, such as strawberries, kiwifruit, pineapple, passionfruit, or whatever is in season.

Your friends and family will be impressed.

    Lovely recipe. You are in hot New Zealand and may be that is why this lovely old recipe came to your mind.
