Peanut Butter Easter Eggs

My family always asks for these. I use the same recipe at Christmas and shape the batter into balls.

Ingredients

  • 3 sticks softened butter(unsalted)
  • 2lb. bag powdered sugar
  • 1 Tablespoon pure vanilla extract
  • 1 cup peanut butter(not crunchy)
  • 8oz. jar marshmallow fluff

Method

  1. Beat the butter and 1/4 bag powdered sugar until light and fluffy.  Add vanilla, peanut butter,marshmallow and mix well.  Add remaining sugar, shape into 2″ ovals with a flat bottom. 
  2. These can also be dipped in chocolate
  3. Melt 2 cups chocolate or baking chips with 2 tablespoons vegetable shortening in double boiler. Using a fork dip eggs in chocolate and cool on wax paper until chocolate hardens.   Store in refridgerator.

This recipe will make approximately 50 eggs.

    Better than any candy you could buy in the store! Tastes like peanut butter cups(chocolate version) but creamier. Easy to make!!

    I hate to bake, but with these cookies, I make sure mom always makes some. I love um
