Apple Cranberry Salad

This is a tart refreshing salad that compliments any poultry or pork. It is also a welcome change to all the heavy, rich, sweet flavors that tend to dominate a holiday meal.

4 cups chopped tart apples

2 Tablespoon lemon juice

1/2 cup finely chopped celery

1/4 cup chopped walnuts

1 cup dried cranberries

1/2 cup raisins

1 6oz container vanilla yogurt

2/3 cup mayonnaise

1 teaspoon ginger

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

Toss apple with lemon juice to coat.  This will keep the apples from turning brown.  Add celery, walnuts, cranberries, and raisins.  In a separate bowl, combine yogurt, mayonnaise and spices.  Fold into fruit mixture.  Cover and chill at least 2 hours.  This can be made and chilled up to 24 hours ahead.
