Apple Pie with Cheddar Cheese Crust

Some people like ice cream on their apple pie; some like cheddar cheese. This pie had the cheese already baked into the crust. For those who have never tried this combination, you are in for a treat.

Apple Pie Filling

8 tart firm apples, cored and thinly sliced (peel if you like)

1 cup sugar

1/2 cup brown sugar

1/2 cup finely chopped walnuts

2 teaspoons cinnamon

1 teaspoon ginger

1/2 teaspoon nutmeg

1/4 cup cornstarch

1/2 cup lemon juice 

Pie Crust

2 cups flour

1/4 teaspoon salt

2/3 cup butter flavored shortening

1 cup shredded extra sharp cheddar cheese

5-6 Tablespoons cold water (more or less as needed to form dough)

Mix all ingredients for filling.  Let stand while making pie crust.  Using a pastry blender or two forks, combine flour, salt, and shortening until crumbly.  Blend in cheese adding water as you go.   Mix until it forms a ball.  It should be moist but not sticky.   Adjust flour or water as needed.  Roll out half the dough onto a floured board or pastry sheet.  Make a circle large enough to line a 9 inch deep dish pie pan.  Pour in filling.  Roll out second half of dough.  Place on top of pie.  Trim and crimp edges  to seal.  Prick top with a sharp knife.  Bake at 375 degrees for 25 minutes.
