Bourbon Soaked Pecan Pie

Extra special pecan pie.

Ingredients

  • 1  9-inch unbaked pie shell
  • 1/4 cup bourbon
  • 1/2 teaspoon vanilla
  • 1 cup pecan halves
  • 2 tablespoons flour
  • 1/2 cup packed light brown sugar
  • 2 tablespoons milk
  • 2 tablespoons butter, melted
  • 1 cup dark corn syrup
  • 3 eggs, lightly beaten
  • 1/4 teaspoon salt

Method

Preheat oven to 350°. Pour bourbon and vanilla over pecan halves; marinate 1 hour.  In another bowl mix flour and sugar; stir in milk, butter, syrup, eggs and salt.  Drain bourbon off pecans;  discard bourbon ( in any way you deem fit)!  Place pecans in pie shell;  pour egg mixture over nuts. Bake 50 to 60 minutes or until knife inserted in custard comes out clean.  Cool on rack.

A small dollop of french vanilla ice cream tops this off wonderfully!

    Lovely recipe, will add that to my Up side down pineapple cake.
    Bourbon, brown sugar, corn syrup, butter. Clogged arteries here it comes.
