Cheesecake Tart
A re you ready for this?
4 ounces oatmeal cookies (six to eight 3 inch cookies)
2 tablespoons melted butter or margarine
2 cups part-skim ricotta or low-fat cottage cheese
2 egg whites
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3 tablespoons light honey
fresh fruit, such as tangerine or kiwi sections or berries, garnish
Method: Lightly oil a 9-inch tart pan. In a food processor or blender, process cookies and butter until the mixture is crumbly. Press mixture onto bottom and sides of tart pan, then refrigerate. Preheat oven to 325 degreesF. Blend cheese, egg whites, vanilla and almond extract and honey in food processor until smooth. Spoon filling into tart shell and bake until firm, about 30 minutes. Chill and garnish with fresh fruit before serving. 8 servings

I’m glad to see this can be made with low fat cottage cheese; it can be difficult to make a good tasting, low fat dessert.
