Chocolate Meringue Pie

This dark chocolate meringue pie is delicious. Rich chocolaty filling is sandwiched between a sweet meal biscuit crust and the creamy chocolate meringue tops it all off.

This decadent chocolate meringue pie has and incredible taste, that is rich and creamy. Delicious sweet meal biscuits make up the foundation of this phenomenal chocolate pie. The sweat meal biscuits are then topped with a delectable dark chocolate filling, that is the topped off with a creamy chocolate meringue, that is simply fabulous. The chocolate meringue pie recipe, has a lot of preparation, but it is really easy to make and tastes fantastic.

Ingredients

  • 8oz Dark Chocolate
  • Sweat Meal Biscuits
  • 1oz Butter (Melted)

Ingredients for Filling and Meringue

  • Filling
  • 3 Egg Yolks
  • 2oz Caster Sugar
  • 2oz Cornflour
  • 1pt Milk
  • 4oz Dark Chocolate
  • Meringue
  • 2 Egg Whites
  • 4oz Caster Sugar
  • 1⁄2 Teaspoon Vanilla Extract

Method

Start by preheating the oven to 325°F. Put the sweet meal biscuits in a plastic bag, and crush them with a rolling pin. Then pour into a bowl and stir the butter into the biscuit crumbs until smooth. Next press the biscuit mixture firmly into the bottom and up the sides of a 9in baking dish or tin.

To make the filling, beat the egg yolks, sugar and corn flour in a large bowl until they form a smooth paste. Heat the milk until almost boiling, then slowly pour it into the egg mixture, whisking well. Then return the mixture to the saucepan and cook gently, whisking constantly, until it thickens. Remove from the heat and melt the chocolate in a heat proof bowl set over a pan of simmering water. Then pour the chocolate back into the saucepan and whisk the egg into the mixture. When finished pour the filling over the sweet meal biscuit base prepare earlier.

To make the meringue, whisk the egg whites in a large mixing bowl. Gradually whisk in about two thirds of the sugar until the mixture is thick and glossy. Fold in the remaining sugar and the vanilla essence and spread the meringue over the filling. Finish by baking the pie in the center of the oven for 30 minutes and serve warm.

    I love chocolate meringue pie, but I’ve never had much luck with the making the meringue. It never turns out right for me.

    Ya the Meringue filling can be tricky, the key is to add the ingredient a little at a time. To much at a time and it’s runny, to little and its to thick.

    I have also messed it up several times :) , If I do think it’s not looking good I make sure, I have extra ingredients on hand and just end up making more filling then I need.
