Crepes Filled with Apple and Pineapple

Crepes seem to intimidate people, as they look so delicate and fragile; but there is no need to head to IHOP or any other restaurant. Making crepes is surprisingly easy to make at home.

Use the basic crepe recipe to make the crepe shells; it’s a lot of eggs with a bit of flour. All in all it’s the filling is that makes the crepe so special.  Fresh fruit so good for you, it just makes sense to treat yourself with a fruit filled crepe after a long day at work or for your next get-together.

 

Things needed to make Apple Pineapple Crepes:

 

  • 1 Gala apple, diced
  • ½ pineapple, diced
  • ¼ Tsp apple pie spice
  • Sprinkle or two of Stevia
  • 8 Ounces cream cheese
  • 1/3 Cup powdered sugar
  • Cinnamon Sauce Topping
  1. Dice your apple and pineapple, canned pineapple can be used if you don’t have a fresh one, put in a sauce pan and add a little water and apple pie spice. Simmer a few minutes until your apple chunks start to get soft. Take off the heat.
  2. Cream together the cream cheese and powdered sugar.
  3. After fruit has cooled, add to the cream cheese mix and blend well.
  4. Lay your crepe shell on a plate. In the center of the crepe put a tablespoon or two of fruit filling.
  5. Fold your first side into the center to cover the filling, fold in the other side. Being very careful turn your crepe over.
  6. Pour cinnamon sauce topping over the crepe.

Tip:

  • If you are making sugar-free for a diabetic replace the powdered sugar with splenda or stevia.
  • If you like strawberries, use fresh or frozen strawberries.
