Family Chocolate Pie
I want to share with you the traditional old recipe for chocolate pie. This recipe has been part of my family cuisine for many generations.
I want to share with you the traditional old recipe for chocolate pie. This recipe has been part of my family cuisine for many generations.
Taken originally from Austria in 19th century it was modified during the time. Original recipe was just for chocolate pie alone. Modifications in 20th century led to adding strawberries and resulted in new special type of chocolate pie. The flavor of this pie was unique in the world thanks to the ingredients typical for this region. However, during the time recipe was spreading across Europe creating various variants of chocolate pie.
1. First thing you got to do is to make shortcrust pastry:
Ingredients for shortcrust pastry:
245 grams of flour, 75 grams of butter, 140 grams of powdered sugar, 2-3 large spoons of rum, 1 cup of sour cream, 1 egg yolk, 50 grams of milled almonds, lemon crust (from 1 lemon).
Procedure:
Before you start you got to keep butter, eggs and flour in a cold place.
- Sift 245 grams of flour.
- Put the 75 grams of crunched butter into sift flour.
- While stirring slowly add 140 grams of powdered sugar, 2-3 large spoons of rum, 1 cup of sour cream, 1 egg yolk, 50 grams of milled almonds and finely cut lemon crust
- Now knead the pastry and then put it in a cold place to rest.
- After some time put the pastry into very hot oven – about 180 degrees (so the water from it could turn in steam and pastry become shortcrusted) and bake it for 25-30 minutes.
- When it’s done let it rest.
2. After you baked shortcrust pastry you can start to make a chocolate mince.
Ingredients for chocolate mince:
4 egg yolks, 140 grams of sugar, lemon crust and juice (from 1 lemon), 150 grams of chocolate, 140 grams of milled almonds, foam of stirred 4 egg-whites.
Procedure:
- Start with mixing and stirring of 4 egg yolks and 140 grams of sugar.
- After they have been well mixed add finely cut lemon crust and lemon juice.
- Next step is to melt 150 grams of chocolate and add it with 140 grams of milled almonds and foam of stirred 4 egg-whites to the mince.
- After mixing it all your chocolate mince is done.
3. Now you have shortcrust pastry and chocolate mince. You are ready for the final step.
1. Make small holes with needle on top of the pastry so the mince can flow trough the pie as well.
2. You need to put about 300 grams of sliced strawberries on top of the shortcrust pastry and cover it with hot mince.
3. When the mince cool down you put your pie into the fridge.
4. Serve the pie cold and add cream if you wish.
5. Enjoy!!!
