How to Make Key Lime Pie

Key Lime Pie is a classic favorite dessert. You can easily make it at home with everyday ingredients and impress your family or guests. Make this dessert a day ahead to let it set properly. It will also give you more time to prepare your main dishes. 

Ingredients:

For the crust:

-         125g digestive biscuits.

-         5 tbsp of butter or margarine.

For the filling:

-         4 egg yolks

-         400g of sweetened condensed milk

-         1 tbsp key lime rinds

-         1/2 cup of key lime juice

-         Whipped cream for decoration (optional)

Method:

  1. Heat the oven to 180C or 350F.
  2. Crush the biscuits into crumbs. You can put it inside a food processor, or put it in a plastic bag and roll it with a rolling pin.
  3. Melt the butter or margarine.
  4. Pour the melted butter or margarine to the crumbs and mix them properly.
  5. Press the crumbs mixture to the bottom and the side of a 9 inches pie dish. Make sure that all the bottom and side of the dish is covered. Put it into a refrigerator and let it set for about 1/2 hour.
  6. While waiting for the crust to set, make the filling. Beat the egg yolk until thick and whiten.
  7. Add all other ingredients except the whipped cream and continue beating until evenly mixed.
  8. Pour into the crust and bake for around 25 minutes until the custard is set.
  9. After the pie is cool enough, put it into the refrigerator for at least 3 hours or overnight. 
  10. Decorate with whipped cream.
